Junior Sommelier

F&B Service Department

Reporting to: F&B Manager

Duties and responsibilities:

  • Responsible for the wine selection, stock monitoring and guest wine suggestions within all F&B outlets
  • Oversee guest satisfaction, maintaining standards and meeting or exceeding company and outlet goals and objectives
  • Project a pleasant and professional image to all contacts
  • Establishing The Chedi wine list and ensuring that it is implemented correctly
  • Establishing wine service standards and ensuring that Team members follow them correctly
  • Ensuring the appropriate stock of wine is kept in hotel at all times
  • Conducting consistent appropriate trainings in order to ensure the appropriate level of wine and wine service knowledge
  • Reacting to all customer requests proactively
  • Monitoring wine sales and following the procedure of wine sales recognition and incentive
  • Monitoring wine sales in order to perfect the wine selection within the hotel
  • Maintaining communication with kitchen, in order o establish appropriate wine & food pairing
  • Implementing LQA and Forbes standards and ensuring that all team members within the outlet are following them properly
  • Ensuring all banquet functions are up to the standard, when it comes to wine service
  • Establishing and maintaining a smooth communication among the team and with other departments
  • Ensure perfection in "suggestive selling" to optimize the wine sales
  • Other operational and administrative duties within the F&B Team, as directed by superior


 Required Knowledge, Skills, Abilities and Other Traits:

  • High school diploma 
  • Minimum WSET 1 level course diploma or equivalent
  • Fluent in English – written and verbal
  • Ability to speak, read, analyze, and interpret standard of performance manuals, technical procedures, manuals or statutory regulations
  • Organizational skills
  • Negotiating skills
  • Wine Sales skills and techniques knowledge
  • Knowledge of LQA Standards
  • Must have at least 4 years’ practical F&B experience in a similar role in high-end restaurant or hotel
  • Food and wine knowledge and creativity
  • Excellent interpersonal and communication skills
  • Ability to coordinate, prioritize and oversee multiple projects
  • Ability to be flexible, resourceful, service-oriented, and self-motivated, mentor and develop subordinates
  • Ability to take quick action to resolve emergency requests
  • Must be able to diagnose problem quickly and accurately and recommend and effect required solutions
